

Miso Glazed Mushrooms
It’s no secret that mushrooms are my favorite vegetable. Are they even a vegetable? Doesn’t matter, they’re delicious, especially when coated in this garlicky, sticky miso glaze.

Baked Vegetarian Taquitos
Originally this recipe was supposed to be for enchiladas, but I couldn’t find a good enchilada sauce, so the baked taquito was born. Creamy, spicy, and a just a bit sweet, these taquitos are best eaten straight off the baking sheet, in your kitchen, alone, so you don’t have to share them with anybody.

Crispy Vegeta Chickpeas
If you haven’t tried Vegeta, you’re seriously missing out. It’s basically an all-purpose seasoning from eastern Europe, which is a such a staple in my half-Czech household. These chickpeas seasoned with paprkia, vegeta, and lemon juice, air fried to a crisp, and ready for snacking in about 30 minutes.

Asian-Style Noodles
Lovingly dubbed “asian noodz” in my house, my boyfriend asks for this dish at least once a week. Maybe now that the recipe is written down, he can make it for me instead.

Banh-Maybe
Kind of a banh-mi, appropriately named Banh-Maybe. Sticky hoisin-glazed mushrooms, lemony sriracha mayo, and a ridiculous amount of cilantro make this sandwich a true crowd-pleaser (if that crowd is made up of a bunch of cilantro lovers).

Mascarpone Alfredo
A silky, luxurious pasta dish that you absolutely deserve to treat yourself to.
Tomato Soup w/ Sourdough Croutons
Could a more perfect soup exist? Tbh, probably, but this one comes pretty damn close to taking the title. Creamy, luscious, and topped with crispy little bites of sourdough heaven, this tomato soup is the epitome of hygge in a bowl.
Christmas Cake
This family recipe is 100% just glorified applesauce cake, but growing up we always referred to it as “Christmas Cake” because my mom would only make it during the holidays. It’s packed with cinnamon, cloves, raisins, walnuts, and a whole lotta holiday spirit.

BBQ Veg Pizza
If every night could be pizza night, the world would be a better place. This is one of my favorite, no fuss, go-to pizza recipes. The mushrooms give it a good bite, but feel free to add some bbq chicken if you’re missing the meat.

Easy af Pomodoro
This is my go-to red sauce recipe (unless Rao’s is on sale, that stuff is GOLD). Stove to belly in less than 30 minutes, it really is easy af.
Roasted Potato Wedges w/ Curry Ketchup
These roasted potato wedges are crispy on the outside, fluffy on the inside, and dangerously addictive (especially when dipped in the curry ketchup). The recipe technically makes 4 servings, but who am I to judge if you eat them all.
Snacking Tofu
This is by no means a healthy snack, but you better believe it’s goddamn delicious. It’s best eaten straight out of the pan with your fingers, but feel free to add it to a stir fry or rice bowl if you’re feelin’ fancy.

Lemon Tortellini Soup
Can’t decide between soup or tortellini? Just have both. Whenever I make this soup, my boyfriend eats it without blowing on it first. I can’t tell if he has zero self control, or it’s just really that good.
Not Your Bodega's Breakfast Bagels
These breakfast sandwiches are everything you want from your corner bodega, but can never seem to get. Toasty bagels, melted cheese, peppery arugula, and a sunny side up egg, all layered together with sundried tomato pesto. You can even as much avocado as you want without having to pay $2 extra.
Pasta Alla Norma
This is my take on Pasta Alla Norma, or pasta with eggplant and tomato. It’s a super simple, incredibly delicious topped with crispy breadcrumbs and piles of parm.

Spiced Pumpkin Loaf w/ Maple Butter
Spiced Pumpkin Loaf is a fall staple. This recipe is pretty standard, no mix-ins or fancy layers, but feel free to add to something if you’d like —try chocolate chips, or maybe a cinnamon streusel topping if you’re feeling a little decadent.
