Christmas Cake

Yield: Two 9x13 loaves, or one 12-cup bundt
Ingredients
2.5 cups flour
2 tsp baking soda
2 tsp cinnamon
2 tsp cloves
1 tsp salt
1 cup granulated sugar
2 eggs
2/3 cup butter, melted and cooled
2 cups applesauce
1 cups raisins
1 cup chopped walnuts
a few tsp of powdered sugar for dusting
Instructions
Preheat oven to 350°. Get ready for your house to smell like a winter wonderland.
In a medium bowl, sift together all the dry ingredients (excluding nuts and raisins). For a lighter cake, sift the dry ingredients twice.
In a large bowl, mix together all the wet ingredients.
Slowly combine the dry ingredients into the wet, thoroughly mixing after each addition.
Fold in the raisins and nuts.
Divide batter between two loaf pans lined with parchment or pour it all into one greased bunt pan.
Bake for 45-60 minutes, or until a toothpick comes out clean. This is a dense cake, so don’t be surprised at the lack of rise.
Cool and dust with as much powdered sugar as your heart desires.
