BBQ Veg Pizza

Yield: 2-4 servings (I made one 18” pizza)
Ingredients
your fave pizza dough
1/2 cup of your fave bbq sauce
1/2 med red onion
about 6 baby bella mushrooms
4 big leaves of kale
12oz fresh mozzarella
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red chili flake
1 tsp olive oil
Instructions
Preheat the oven to 450°F
Prep! Slice the red onion into thin strips, thinly slice the mushrooms, chop the kale into bit size pieces, and tear the mozz into bite size chunks.
In a large bowl, add the kale, olive oil, salt, and pepper. Massage the kale with your hands until all the pieces are covered in oil.
Roll our your pizza dough to fit your lightly oiled pizza pan. I made one 18” pizza.
Time to assemble! On the dough, add the BBQ sauce. If 1/2 a cup isn’t enough, add a bit more. It really just depends on how saucy you like your pizza.
Then add half the mozz, the kale, the mushrooms, red onion, and top it all off with the rest of the mozz.
Bake for 25-35 min, depending on your oven and the size of your pizza.
When the crust is golden brown and the cheese is all melty, it’s probably done. Sprinkle it with a good bit of red chili flake to finish.
Slice and serve! I recommend eating it right off the pan so you don’t have to wash any extra dishes.
