Summer Corn Salad

Ingredients

1 lb roasted corn (Trader Joe’s frozen roasted corn is perfect for this)
2 roma tomatoes (seeds cut out)
2 bell peppers
1 bunch of radishes (about 5-6 small ones is good)
1 avocado
1/2 lime (juice and zest)
1/2 red onion
1/2 cup cilantro (rough chop)
1/2 cup cojita
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 tsp cumin
1 tsp garlic powder
2 tsp tajin (sub in chili powder if you don’t have tajin)
1/2 tsp pepper
1 tsp salt

Instructions

  1. Wash and dice all the veg. Everything should be about the same size. Save the avocado for last so it doesn’t brown while you chop everything else. Throw it all into a large bowl.

  2. In a small bowl, mix together the spices, red wine vinegar, olive oil, lime juice, and lime zest. Mix until well combined, then pour it over the veg.

  3. Stir gently, making sure not to mash the avocado. Add the cilantro and cojita and stir again.

  4. Taste, adjust seasoning as needed. Serve immediately, or let it hang out in the fridge and marinate for up to 24 hours before serving.
