Vanilla Bean Ricotta Toast

Can we just take a second to appreciate the aesthetic of pipped ricotta? I mean, c’mon. It doesn’t get any prettier than that.

Can we just take a second to appreciate the aesthetic of pipped ricotta? I mean, c’mon. It doesn’t get any prettier than that.

Cook Time: 5ish min

Yield: 4-8 pieces (depends how thick you spread the ricotta)


Ingredients

1 vanilla bean
15oz container of ricotta cheese
4-8 slices of sourdough bread
1/2 cup chopped walnuts
1/2 tsp honey per toast

Instructions

  1. Lightly toast the bread. You’re looking for a barely there golden brown on each side.

  2. Scrape the seeds out of the vanilla bean. Add the seeds and the ricotta cheese to a blender or food processor, and blend for 1-2 minutes. The ricotta should be light & fluffy in texture.

  3. Spread a layer of ricotta (or pipe it on if you’re feelin’ fancy) onto each slice of toast. Sprinkle on the walnuts. Finish it off with a drizzle of honey.

  4. Eat. Enjoy. Cry a little when it’s over.
