Vanilla Bean Ricotta Toast

Yield: 4-8 pieces (depends how thick you spread the ricotta)
Ingredients
1 vanilla bean
15oz container of ricotta cheese
4-8 slices of sourdough bread
1/2 cup chopped walnuts
1/2 tsp honey per toast
Instructions
Lightly toast the bread. You’re looking for a barely there golden brown on each side.
Scrape the seeds out of the vanilla bean. Add the seeds and the ricotta cheese to a blender or food processor, and blend for 1-2 minutes. The ricotta should be light & fluffy in texture.
Spread a layer of ricotta (or pipe it on if you’re feelin’ fancy) onto each slice of toast. Sprinkle on the walnuts. Finish it off with a drizzle of honey.
Eat. Enjoy. Cry a little when it’s over.
