Brown Butter Garlic Noodles

Ingredients
1 9oz package of fresh pappardelle (or your fave dried pasta)
6 cloves garlic
6 tbsp butter
1/4 cup parmesan
1/2 tsp salt
1/2 tsp red chili flake
1 tsp pepper
4 balls of burrata
Instructions
Prep! Slice the garlic verrrry thin. I use a vegetable peeler to do this since I don’t have a mandoline, and it works just fine.
Cook the pasta according to the package.
In a medium pan, melt the butter. Once the butter is melted, add the garlic and red chili flake. Keep swirling the pan until the garlic is toasty brown and the butter becomes dark and nutty. This can happen pretty fast, so make sure to keep an eye on it!
Add the cooked pasta to the butter garlic sauce. Give it a toss. Add the parm, salt, and pepper. Give it another toss, making sure every noodle is covered in sauce.
Divide into 4 portions. Top each pile of noodles with a ball of burrata and a grind of fresh pepper.
Eat. Transport into buttery, garlicky, cheesy heaven.
