Arugula Pasta Salad
The pasta to arugula ratio is basically 1:1 so if you don’t like arugula, don’t make this.
Ingredients
1/2 lb pasta
8oz arugula
as much parmesan as your heart desires
For the dressing:
4 tbsp lemon juice
zest from one lemon
3 tbsp olive oil
1 tsp honey
1/2 tsp pepper
1/2 tsp salt
1/2 tsp garlic powder
Instructions:
Cook the pasta according to the package instructions.
Add all the dressing ingredients to a large bowl and whisk to combine. Add cooked pasta and arugula and toss until everything is coated in the dressing. Top with as much shaved parmesan as you want (the more the better!).
Serve!
