Lemon Kale Pasta

Yield: 4-6 servings


Ingredients

1 large lemon, juice & zest
3 tbsp butter
6 cloves garlic
1 bunch kale
8oz mushrooms
1 pint baby tomatoes
1 lb pasta
1/4 cup parmesan
1/2 ball of mozzarella
1/2 tsp red chili flake
1 tsp salt
1/2 tsp pepper
2 tbsp olive oil

Instructions

  1. Prepare pasta according to package.

  2. Prep the veg: thinly slice the mushrooms, rough chop the kale, slice the tomatoes in half lengthwise, mince the garlic, juice and zest the lemon.

  3. Heat oil in a large pan over med/high heat. Once oil is hot, add the mushrooms and cook until they are nicely browned. Add the garlic and tomatoes and continue to cook until garlic is fragrant and mushrooms start to release some of their juice.

  4. Add the kale, lemon zest, and spices. Cook until the kale is fully wilted, then add in the butter, lemon juice, spices, pasta, and parm. Stir gently until everything is fully combined.

  5. Crumble in some mozz right before serving. Finish it off with another squeeze of lemon for a lil extra zing.
