Yield: 4-6 servings


Ingredients
10oz dried rice noodles (I used these, but rice noodles are more traditional)
1 medium white onion
1 large carrot
3 cloves galic
1/4 head of cabbage (about 4 cups, sliced thin)
2 tbsp vegetable oil
1/4 cup hot water
1/3 cup dark soy sauce
1 lemon (just the juice)
1 bullion cube (preferably Knorr chicken or vegetable flavor)

Instructions

  1. Place dry noodles in a large bowl and cover them with boiling water. Let them sit until they are soft, then drain and set aside.

  2. Thinly slice the cabbage, onion, and carrot.

  3. Heat oil in a large pan over medium heat. Once oil is hot, add the onion and garlic and saute until the onion is soft, about 2-3 minutes.

  4. Add the cabbage and carrot, stirring every once in a while until the vegetables start to soften, about 8-10 minutes.

  5. In a separate bowl, dissolve the boullion cube in the 1/4 cup of hot water. Add the soy sauce and lemon juice and mix until combined.

  6. Add the cooked noodles to the vegetable mixture, then pour the sauce over the noodles. Cook and stir gently until the sauce is evenly distributed through all the noodles.

  7. Taste and adjust seasoning as necessary.

  8. Serve it up! I like to add a little extra lemon and a good squeeze of sriracha on top.
