Cuban-ish Grilled Cheese

Yield: 2 sandwiches


Ingredients

1 sweet plantain (the blacker the better)
4 slices of whole grain bread
1/2 cup gruyere cheese (shredded)
1/2 cup sharp cheddar cheese (shredded)
2 tsp mustard
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
oil for frying

Instructions

  1. In a large skillet, heat the oil for frying the plantains. Peel and slice the plantain lengthwise into 1/4” thick slices.

  2. Once the oil is hot, fry the plantains until golden brown on both sides, about 3-5 min. Work in batches if needed, being careful not to overcrowd the pan. Transfer to a cooling rack lined with paper towels to absorb the excess oil. Sprinkle with salt and pepper while they are still hot.

  3. Let’s build the sandwich! Butter one side of a slice of bread. On the non-buttered side, spread a thin layer of mustard, then layer on the cheddar, plantains, and the gruyere. Spread a thin layer of mustard on another piece of bread, and put it mustard side down to close up the sandwich. Butter the outside of the bread. Repeat so you have two sandwiches.

  4. Heat a skillet over medium heat. Add a sandwich and cook until golden brown. Flip and continue to cook until both sides are golden brown and the cheese is fully melted.

  5. That’s it! Serve while warm. Slice it in half to see all the gorgeous layers. Measure your cheese pull.
