Crispy Tofu Nuggets

Ingredients
1 block extra firm tofu
1.5 cups panko
4 tbsp cornstarch
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder
oil mister or cooking spray
For the marinade:
1/2 cup soy sauce
1/2 cup water
1 tbsp nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp pepper
1/2 tsp marjoram
Instructions
Press the tofu for at least 30 min. While the tofu is pressing, mix together the marinade ingredients in a small bowl.
Tear the tofu into bite size chunks. Place the tofu chunks in a shallow dish and pour the marinade over the tofu. Cover with plastic wrap and let it marinate for at least 30 min (or up to overnight).
After the tofu is done marinating, drain it and return it back to the shallow dish. Add the cornstarch and mix gently until each piece of tofu is covered in a paste like mixture. This will help the panko stick to the tofu.
Preheat the oven to 400°F.
In a medium bowl, mix together the panko and spices.
Gently take one piece of tofu at a time and roll it around in the seasoned panko. Place it on a parchment lined baking sheet. Repeat with all the pieces of tofu.
Spray each piece with a generous layer of oil, making sure to get all the sides. Pop them in the oven and bake for 15 min, then take them out, flip them over, spray with more oil, and continue to bake until golden and crispy (about 15 more min).
Let cool a bit and then serve them with your favorite dipping sauces — ketchup & bbq sauce are my personal favs.
