Sweet and Spicy Noodles with Chili Oil Eggs

Ingredients

4 tbsp soy sauce
1 tbsp dark soy sauce (mostly for color, if you don’t have this just add 1 more tbsp of regular soy sauce)
2 tbsp hoisin sauce
1 tbsp sesame oil
1/2 tbsp rice vinegar
3 sprigs of green onion, sliced and separated white from dark green
3 cloves garlic, minced
3 packs of dried ramen noodles (noodles only, the spice packet isn’t needed for this recipe)
4 tbsp chili oil or chili crisp (plus more for garnish. I personally like this brand.)
4 eggs
sesame seeds for garnish

Instructions

  1. Start with the eggs! You can cook them all at once, or one at a time in a small egg pan (that’s what I do because they turn out so perfectly shaped). Use 1 tbsp of chili oil per egg.

  2. Heat chili oil in a small pan over medium/low heat. When the oil is warm, crack the eggs into the pan and cook for 2-3 minutes. You can use a spoon to grab some chili oil from the sides of the pan and pour it over the eggs. Watch out for splatter! Cover and cook until the whites are set and no longer translucent. If you don’t want a runny yolk, cook it longer. Once the eggs are cooked, set them aside for later.

  3. Make the sauce! In a large pan, heat the sesame oil over medium heat. Once the oil is hot, add the minced garlic. Cook until garlic is lightly browned and fragrant.

  4. Add the soy sauce, dark soy sauce, hoisin sauce, and rice vinegar. Stir until well combined. Turn heat down to low and simmer, stirring occasionally, while you cook the noodles.

  5. Cook the noodles! Boil the water, throw in the ramen noodles (save the spice packet for another day) and cook for 2-3 minutes. Drain the water and toss the cooked noodles into the pan with the sauce. Add the sliced green onion (just the white and light green parts) and stir until the noodles have absorbed all the sauce.

  6. Let’s plate! Portion out the noodles into bowls and top each bowl with an egg. Spoon the excess chili oil on top of the noodles, and garnish with the dark green bits of the green onion and a sprinkle of sesame seeds. If you like spice, top it off with more chili oil.
